Sundarban Syrup

Golpata Jhola Gur — the natural syrup of the mangrove

Golpata palms grow along the salty rivers of the Sundarbans. In winter, local gaachis tap the palm for its sweet sap, then slowly boil it over a fire until it turns into a thick, golden syrup with a soft caramel taste.

Use it on pitha, pancakes, yoghurt, porridge or in tea — anywhere you would use honey or sugar syrup.
